Ingredients
- 4 large eggs
- 2 slices sourdough
- 4 slices nitrate free bacon
- 2 pak choi
- 2 spring onions
- big handful fresh coriander
- 1/2 tablespoon tamari or soy sauce
- 2 teaspoon untoasted sesame oil
- big handful tomatoes
Preparation

Finely chop spring onions & coriander, whisk with the eggs & tamari/soy. Drench your bread in this lovely mix, leave to sit for 2-3 minutes.

Meanwhile heat a pan on a medium flame, add the bacon & leave to cook.

Halve the pak choi, rub the cut side with 1/2 teaspoon of sesame oil. Place cut side down into the pan with the bacon. Let this cook for 1 minute.

Slit the back of the pak choi & create a space in the centre for your bread slices. Add the remaining sesame oil & pop the bread on top. Let this cook gently for 3 minutes, once golden flip & cook for another 2-3 minutes until crispy on the second side.

Halve your cherry tomatoes, then simply plate up & dive in!
