This delectable rainbow bowl is packed full of omega 3, with the addition of mackerel and topped with a ‘Super Sprinkle’, it’s great for the gut.
A perfect, quick & easy lunch idea.

Ingredients
2 handfuls mixed bitter greens (e.g. baby chard, radicchio, endive & nettler)
3 hot radishes
1/2 red pepper
2 small roasted beetroot
1/2 avocado
2 smoked mackerel fillets
2 tablespoon sauerkraut
1/4 cup mixed pumpkin, black onion, hemp, chia & sesame seeds
TO DRESS – juice of 1/2 lemon & a drizzle of extra virgin olive oil

Preparation
01 – Chop, toss, tumble, sprinkle & serve!
